Written by: Kate Leeney-NASM Nutrition Coach, Fitness Nutrition Specialist, Personal Trainer

Orange beef/chicken is a Chinese classic dish that everyone can enjoy! You can swap out the meat use chicken or a plant-based protein. Because ingredients are SUPER important in your lifelong nutrition journey, I made the cleanest version for you! Here is the recipe below. Let me know if you try it or tag us on luminous_wellness on IG!

INGREDIENTS

  1. Put 1 tbsp avocado oil on medium heat in a pan. Add onion and bell pepper and saute 4-5 minutes or until soft.

  2. Add 1 more tbsp avocado oil. Add the ground beef and stir until browned.

  3. In a separate bowl: mix dijon mustard, tomato paste, and diced tomatoes. Add to the pan and simmer. Place on low for 5-7 minutes stirring frequently.

  4. Add garlic powder, onion powder, and sea salt. Mix and you are DONE!

DIRECTIONS

  1. Season your meat with salt and pepper and cut into desired pieces.

  2. Add to a bowl and coat with arrow root starch.

  3. Heat avocado oil in a pan and cook the meat for 2-3 minutes on each side. Set aside.

  4. Blend ginger, garlic, and orange juice. Add to pan and saute.

  5. Add coconut aminos and apple cider vinegar to the pan and stir well to combine. Allow thickening over 2-3 minutes.

  6. Add the meat back to the pan and stir to coat in the sauce for 3-5 minutes or until meat is cooked through.

  7. Serve topped with sliced green onion and your favorite rice! Some options would be: brown rice, cauliflower rice, or spaghetti squash. I used Asian Ginger Rice from Tolerant Organics. ENJOY!
