Vanilla Coconut Protein Bites

By: Kate Leeney- NASM CPT, Nutrition Coach, FNS

Coconut 🥥 Vanilla Protein Balls

Coconut is such an awesome flavor and there is so much you can do with it! These are a great snack if you have a midday or nighttime sweet tooth. These were easy to make and last one week in the refrigerator. Depending on serving size, they are 100-200 calories per ball! I chose to go with 10 balls for my servings. Tag us if you try it and enjoy!

INGREDIENTS:

- 1/2 cup peanut butter or almond butter (I chose a peanut butter that had only dry roasted peanuts as the ingredients).

-2 scoops Vanilla Protein (I used @vega)

-1 tbsp coconut oil

-½ cup coconut flakes

-1 tsp honey

-1 scoop collagen (optional)

DIRECTIONS:

-Blend your nut butter, protein powder, coconut oil, honey, and optional collagen in a blender.

-Transfer your mixture to a bowl and refrigerate for 1-2 hours.

-Place your coconut flakes on a plate. Roll your mixture into balls and roll them through the flakes!

-Keep refrigerated for one week.
